It’s a good source of fiber, it’s rich in calcium and vitamin C, and it has a nutty flavor that’s good for your teeth.
The salad, however, is a staple of my life, and I’m not just referring to my love of it.
The ingredients are simple: a couple of cans of canned green beans, and a few chopped kale leaves.
(I used one of those for this recipe.)
Then I add the canned chickpeas, and some zucchini, bell pepper, parsley, and red pepper flakes.
It tastes just like you’d expect from a salad: fresh, creamy, and healthy.
The kale adds some nutrition as well, though, which helps balance out the mild taste of the beans.
The cauliflower, on the other hand, is so full of fiber that it’s not the most nutritious food on the planet, but it’s one of the most versatile, too.
A couple of cups of it can make up for a lot of pasta, and that’s not even counting the fact that it makes a great side dish, as well.
